Chewy Granola Bars

Last night, I went to visit my sister and her brand new baby girl in the hopspital.  With me, I brought a few cute little gifts for the baby and something for the new mom to snack on in the middle of the night.  These granola bars are soft, chewy, and make the perfect snack or even a breakfast on the go.  You can make the recipe your own by adding different fruits, nuts, or, my personal favorite, mini chocolate chips!

 

 Chewy Granola Bars

  • 2 ¾ Cup Rice Krispies
  • 2 ¼ Cup Quick Oats
  • ½ Cup Raisins, rolled in cinnamon sugar to reduce sticking
  • ½ Cup Corn Syrup
  • ¾ Cup Brown Sugar
  • ¾ Cup Chunky Peanut Butter
  • 1 tsp Vanilla

In medium sized bowl, mix together the cereals, dried fruit, chips, or nuts.  Set aside.  In heavy bottom sauce pan, heat the corn syrup and brown sugar just until boiling and remove from heat.  Stir in the peanut butter and vanilla.  Add to cereal mixture and stir until combined.  Press the mixture into a greased 9×13 pan. (similar to making krispie treats).  Let cool at room temperature.  Cut, serve, and enjoy!

    Someone in the family has a peanut allergy. What can I substitute for peanut butter for this and other recipes similiar?

      Try Sun butter in place of Peanut butter.

      If you do try one of these options, I would be interested in feedback on how they turned out. I have not made them with soy nut butter, but everything that I know about it suggests that it would work. Good Luck! :-)

    You can also use soy nut butter for those with peanut allergies.
