Pear and Cambozola Pizza

When I get home from work tonight, I think it will be a good night for a glass of wine and little something to warm and cheesy to nibble on.  One of my favorite new treats to make is Pear and Cambozola Pizza.  Cambozola is a wonderful cheese and is a cross between Camembert and Gorgonzola cheese (similar to brie and blue)…..Can you go wrong???  Yum.  In fact, if you are unable to find cambozola cheese at your local grocery store, try looking for blue brie.  It is often marketed like that so more people understand what it is.  I prefer the way “cambozola” sounds as rolls off the tongue!

 

 

 

Pear and Cambozola Pizza

  • 1 packaged pizza crust
  • 4.5 ounces thinly sliced cambozola cheese
  • 2 tbsp chopped fresh rosemary
  • 2 whole pears, thinly sliced, peel on (or 1 canof pears in light syrup)
  • 3 Tbsp dark brown sugar
  • 1/4 cup walnuts (optional)
  • 1/3 cup shredded parmesan cheese

Preheat oven to 400 degrees.  Place pizza crust on a medium baking sheet.  Arrange a layer of cheese over the crust, being sure to leave a 1/2 inch ring of crust around the edge of the pizza.  (Don’t worry about getting every inch of the pizza covered, the cheese will melt and spread) Sprinkle cheese with rosemary.  Layer the pear slices over the cheese and top with walnuts and sprinkle with brown sugar and Parmesan cheese.  Bake in the preheated oven 10-12 minutes, or until cheese is melted and crust is lightly browned. Remove from oven.  Slice and serve!

    Just FYI, Cambozola is actually a blend of Camembert (like brie but not brie) and Gorgonzola, a very creamy Italian blue cheese.
