My little guy is now exploring the protien world and here is a tasty recipe to try out! This recipe taste so much better than so many of those canned or pouched foods. Simply spead the finished product into an ice cube tray, freeze them, pop them out of the holder and store them in a freezer safe zip-seal bag. Just pull out the portion you need for the day and, viola! You just made dinner for your little one!
Baby Gourmet – Chicken Curry Dinner
- 1.5 lbs boneless, skinless chicken breasts, diced 2 inch cubes
- 1 large sweet potato, diced 1/2 inch cubes
- 1 tsp curry powder
- 1 1/2 cups water
- 1 1/2 cups unsweetened apple sauce
- 1/2 cup rice cereal
Combine chicken, sweet potato, curry powder, and water in a pot on the stove. Bring to just about boiling and reduce heat slightly. Let cook for 20-30 minutes or until chicken is cooked through (165 degrees) and potato is soft. Remove from heat and put all ingredients into a food processor. Add applesauce and rice cereal. Puree for 45 seconds or until desired consitency is reached. Enjoy!
