Here is a thirst quenching drink perfect for the scorching weather this weekend has in store! I first discovered this recipe from Sandra Lee a few months ago and finally tried it out yesterday. I used frozen raspberries, only because my son ate all the fresh ones, but both would work equally well. With or without the vodka, this colorful, fruity lemonade served with plenty of ice is perfect for sitting on the patio or the dock this weekend!
Pretty Pink Lemonade
- 1 pint fresh raspberries
- 1 (12-ounce) can frozen concentrated lemonade, thawed
- 1 1/2 cups vanilla vodka (optional)
- 3 cups cold water
- 2 cups seltzer water, chilled
- Mint sprigs, for garnish
- 1 lemon, sliced into thin rounds
Put the raspberries in a blender or food processor and puree. Using a rubber spatula press the raspberry puree through a fine mesh sieve into a medium bowl. In a large pitcher combine the frozen concentrated lemonade, strained raspberry puree, the vodka, 3 cups of cold water and the seltzer. Stir and pour into glasses filled with ice. Garnish each glass with a sprig of mint and a lemon slice.
