Ice Cream Sandwiches – All Grown Up

One of my favorite treats when I was growing up was an ice cream sandwich on a hot summer day.  Well, I wasn’t really that picky.  I am sure I enjoyed my fair share in the winter months as well! 

I love to make these sandwiches for dinner parties or afternoons when I know friends are bringing children, however, I just served these to an adult only party and I didn’t hear any complaints!  The ones photographed here are not rolled in toasted chopped nuts or coconut, but that is also a fabulous addition to the recipe.  The combinations are endless!



Grown Up Ice Cream Sandwiches

  • 8 chocolate cookies – I used our regular bakery brownie cookies
  • 2 cups ice cream, softened – my favorite is Ben and Jerry’s Phish Food or Cherry Garcia


Lay 4 cookies flat side up on work surface and top with 1/2 cup (less if you like) of ice cream.  Top with remaining 4 cookies and smooth any ice cream around the edges of the cookies and wrap in foil or plastic wrap.  Chill in freezer for at least 1 hour before serving.


Serves 4 (or 8)

I say to you, I certainly get annoyed whilst other folks consider worries that they just don’t recognize about.
