There is nothing better than waking up on a cool morning, knowing that a warm and delicious breakfast is waiting for you! I love to make overnight oatmeal because it elminates the breakfast rush in the morning. The sweet coconut and banana flavors and this topped off with a few chopped macadamia nuts, milk, and a touch of sugar free breakfast syrup makes me feel like I am on a tropical vacation for 5 minutes and not about to brave the frosty morning temperatures and a day of putting out fires at work! Plus, any leftover store easily in the fridge for the rest of the week and reheat in the microwave in 1 minutes. It doesn’t get much easier than that!
Overnight Coconut Banana Oatmeal
- 2 cans coconut milk (can use light if you like)
- 1.5 cups steel cut oats
- 1 cup bran buds cereal
- 1.5 cups water
- 1/4 cup dark brown sugar
- 3 bananas, sliced
- 1 Tbsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt, iodized
Spray the inside of a crockpot with pan spray. Pour in all ingredients and stir gently. Cook on low with the lid closed for 7-8 hours. Serves 6-8 people. Enjoy!
