Dark Chocolate Cherry Scones

One of my favorite breakfast treats is a great scone and any meal that I get the opportunity to include chocolate is a winner in my book!  Here is a very quick and easy scone recipe.  If you don’t have have the fancy food processor, you can use a pastry cutter or even your hands.  Don’t over mix the dough.  When the butter stays in “little bits” it actually forms steam pockets in the oven and leads to lighter, fluffier scones.  If dark chocolate or cherries aren’t your thing, you can always change up the chocolate or the fruit.  Use your imagination!

 

 

 

 

 

Dark Chocolate Cherry Scones

  • 2.5 Cups All Purpose Flour
  • 1 TBSP Baking Powder
  • 1 TBSP Granulated Sugar
  • 1/8 tsp Iodized Salt
  • 1 Cup Dark Chocolate Pieces
  • 1 Cup Dried Cherries
  • 6 Tbsp Butter, well chilled
  • 2 Eggs
  • 3/4 Cup Heavy Cream
  • Sugar for topping scones

Combine flour, baking powder, sugar, salt, chocolate, and cherries with the chilled butter in food processor.  Pulse until grainy texture is achieved.  Add 2 eggs and ¾ cup cream.  Pulse just until dough begins to stick together.  Remove.  Pat into 2 circles and cut each circle into 4 or 8 pie shaped pieces.  Sprinkle with sugar and bake in 400 degree oven for 10-14 minutes or just until pale golden color forms around the edges.

    So let me get this right. Dried cherries AND dark chocolate together in a scone? OMG, I’m in heaven.
