Mini Corn Dog Muffins

These bite (or two) sized delights are baked in a mini muffin pan and are sure to please the palates of both the young and old.  They also go great with your favorite frosty mug of ice cold “milk”!



Mini Corn Dog Muffins

  • 3 all beef hotdogs
  • 1/4 cup applesauce, unsweetened (can use melted butter)
  • 1/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 TBSP mustard
  • 1/2 Cup Flour (I used whole wheat)
  • 1/2 Cup Cornmeal
  • 1/2 tsp baking soda
  • 1/4 tsp iodized salt

Preheat oven to 400 degrees.  Spray mini muffin pan with cooking spray.  Cut hotdogs into 1 inch pieces.  Set aside.

Whisk together dry ingredients in a large mixing bowl.  In separate small bowl, whisk together the applesauce, sugar, egg, and milk.  Stir the wet ingredients into the dry and mix only until combines.  Batter will be lumpy.

Spoon one tablespoon of batter into greased mini muffin tins.  Place one hotdog piece in the center of each muffin.  Bake for 10 minutes or until golden brown.  Makes 24 mini muffins.  Enjoy!
