Soft Pumpkin Cookies

What does fall taste like?  These pumpkin cookies!  Here is a recipe that I wish I never would have discovered because they are so easy and so delicious that I can’t think of a time a day that these would be inappropriate to make/eat.  They take less than 20 minutes from start to finish and these cookies, unlike so many other 2 ingredient recipes, really were everything that I wished they would be!  Perfect, tender, cake like cookies with just the right amount of spice.  Just top these off with a touch of cream cheese frosting and a light dusting of pumpkin pie spice and enjoy!

 

Soft Pumpkin Cookies

  • 1 box spice cake mix
  • 1- 15 can pumpkin, not pumpkin pie filling
  • Cream Cheese Frosting
  • Pumpkin Pie Spice

Directions:

Preheat oven to 350 degrees.  Combine cake mix and pumpkin in medium bowl.  Mix until combine and almost smooth.  Drop by the teaspoon full onto a prepared cookie sheet.  Dip finger tips in water and gently run them over the top of the cookies to form an almost smooth top.  (the cookies won’t change shape in the oven, so think of how you want the finish product to appear)  Bake for 12-15 minutes or until cookies are set and cake tester comes out clean.  Remove from oven and let cool completely on wire cookie racks.  Frost and sprinkle with pumpkin pie spice.
