Almost Instant Boursin Mashed Potatoes

Well, let me preface this by saying that these are real potatoes, but since they are made in the microwave, they take only minutes to make!  They are a great addition to any weeknight meal, but also a little trick I keep up my sleeve when preparing food for large family gatherings because there never seems to be enough space on the stovetop.  These potatoes use a garlic and herb flavored goat cheese to add big flavor with very little work!

 

 

Almost Instant Boursin Mashed Potatoes

  • 8 medium red potatoes, skins on
  • water
  • 1 tsp kosher salt
  • 10 ounces Boursin Cheese
  • 1 stick butter
  • 1/3-1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup parmesan cheese, shredded
  • 1.5 tsp cracked black pepper

Directions:

Cut each potato into quarters (or 8ths, depending on how quick you want them to cook) and place them into a microwave safer dish and cover with water.  Sprinkle with kosher salt.  Cover and place in microwave and cook on high for 15 minutes, or until done.  If you are using plastic wrap, make sure to prick a few holes in it.  Remove the dish from microwave and drain potatoes.  In a large bowl, or the same dish they were cooked in, add the potatoes, Boursin cheese, butter, cream, chicken stock, parmesan cheese, and black pepper.  Using a potato masher, smash potatoes until smooth and all ingredients are evenly incorporated.  Enjoy!

Serves 8-10 people
