Vanilla Spice Almonds

Looking for a great homemade gift or a little something different to put on a dessert buffet?  How about Vanilla Spice Almonds?  I love to have these around the house during the holidays because they are a great alternative to all of the sugar cookies and fudge that seem to pop up this time of year.  This recipe works great with any mix of nuts you would like to use.  Plus, because they keep a long time, you can make them a week or 2 ahead of the time you would like to serve or gift them!







Vanilla Spice Almonds

  • 1 pound almonds, raw
  • 2/3 cup sugar, granulated
  • 1/2 tsp kosher salt
  • 1/2 tsp cloves, ground
  • 1 tsp cinamon, ground
  • 1/2 tsp nutmeg, ground
  • 1/4 cup water
  • 2 tbsp vanilla extract  (I use a vanilla crush extract, it has the vanilla bean seeds in it)


In a non-stick pan over medium/low heat add all all dry ingredients.  Stir often.  When sugar begins to melt and when all off the sugar is sticking to the almonds, about 30 minutes later, add water and vanilla.  Cook stirring constantly for another 10 minutes or until all of the syrup in the pan clings to the almonds.  Lay then on a cookie sheet and after 5 mintues, break apart any large clumps.  Serve warm or store in a cool, dry place.  Enjoy!
