Pecan, Date, and Blue Cheese Ball

December 18

Looking for a speedy, make ahead and easy to transport appetizer?  Cheese is a great option and it makes a fantastic addition to any holiday appetizer spread, but often times, you have to purchase multiple types to please the taste of large groups and that can mean big money.  Enter the cheese ball.  (Don’t fear….this is not your mother’s 1970’s cheese ball recipe!)  This retro chic hors d’oeuvre not only stretches your cheese dollar , but the tangy blue cheese, zip of the shallot and sweet, candy-like dates are sure to blend with perfectly with even your most sophisticated guests wine, beer, or ginger ale.  Serve this cheese ball with your favorite crackers or veggies and enjoy!

Pecan, Date, and Blue Cheese Ball

  • 1/2 small shallot, finely chopped, about 2 tablespoons
  • 4 ounces blue cheese, crumbled
  • 2 Tbsp sour cream
  • 8 ounces cream cheese
  • 1 tsp cracked black pepper
  • 1/2 tsp kosher or sea salt
  • 1 – 8 ounce bag chopped dates, or 1.5 cups
  • 1 cup chopped pecans
  • 1/4 cup chopped parsley

In food processor, combine shallot, blue cheese, sour cream, cream cheese, salt and pepper in food processor fitted with a metal blade.  Pulse until evenly combined.  Be sure not to over proccess because it will cause the cream cheese to “break” or loosen.  Add chopped dates and pulse until combined.  Remove mixture from processor bowl and form into a round ball.  Wrap in plastic wrap and let chill for 1 hour or until ready to serve.  Meanwhile, in small bowl, combine pecans and parsley.  Mix together.  Unwrap cheese ball and roll in nut mixture.  Serve with crackers or your favorite veggies.  Enjoy!
