Coconut Bellini

Here is a recipe for a cocktail that is sure to bring your taste buds joy at your next brunch or cocktail gathering.  I love that this drink tastes like you should be sitting on a beach and soaking in the warm sun, but the creamy color and fantastic light foam combined with sugar rimmed glass and this heavenly little drink will be popping up at all of your winter gatherings!  This drink also makes a perfect mock-tail for guests that are not wanting alcohol because it is also great when made with a sparkling grape juice.  So enjoy a bit of “warm weather” as you ring in the New Year!

 

 

 

Coconut Bellini

  • 2 Tbsp Cream de Coconut, plus a little more put into the bottom of a bowl for rimming the glasses
  • 6 ounces Sparkling Wine, very cold
  • Granulated sugar or white rimming sugar

Directions:

Rim champagne flute by putting them rim side down in a small amount of cream of coconut and then into a plate of rimming sugar.  Next, measure 1-2 tablespoons of cream of coconut into the flute glass.  Top with sparkling wine.  (if the mixture doesn’t start to foam, give it a gentle stir with a spoon.  Enjoy!
