Moroccan Beef Stew

There is no doubt that beef stew is a common comfort food to serve during cold weather, but here is a new twist on it!  This Moroccan Beef Stew adds to the warm feeling you get when you eat it by using curry powder, cinnamon, cumin, red pepper flakes, and delicious dried fruits for a little added sweetness.  Not too much, but just the right amount to balance out the chilies and to keep you feeling “warm and fuzzy” on the inside.  To keep this stew from being too rich, I also added fresh orange zest to keep the flavors bright.  And because my new oven is not getting installed until Thursday, this recipe is made in the crockpot.  Set the temp to low and when you get home from work, the delicious aromas of this stew will be filling your house!  Enjoy!



Moroccan Beef Stew

  • 3 tbsp coconut or olive oil
  • 2 pounds beef stew meat
  • 2 tsp kosher salt
  • 1.5  tsp cracked black pepper
  • 1 large yellow onion, diced
  • 4 cloves garlic
  • 3 tbsp fresh grated ginger
  • ½ tsp red chili flakes
  • 1 large sweet potato, diced 1 inch
  • 2 red potatoes, diced 1 inch
  • 1 10oz bag of sliced carrots, fresh
  • 1 cup Prunes, quartered
  • 1.5 cup Golden raisins (or a mixture of dark and golden….I was supposed to use all golden, but my son thought it needed some dark ones!)
  • 1 tsp Cinnamon, ground
  • 2 tbsp curry powder
  • 1 tbsp Cumin, ground
  • 1 tbsp paprika, ground
  • 1 tbsp (plus extra for garnish) orange zest
  • 1/2  cup orange juice, fresh squeezed
  • 2 cup beef broth
  • 2 cups red wine (or pomegranate juice)
  • 1.5 cups frozen green peas
  • chopped almonds for garnish
  • parsley or cilantro for garnish


In large saute pan, or if you are lucky enough to have a crock pot that has a searing function use that, heat the coconut oil until shimmering.  Add beef, salt, pepper, garlic, and ginger and red pepper flakes.  Cook until meat is browned.  Add onions and cook until translucent.  If using a saute pan, add this mixture to the crockpot.  Set timer to low (8 hours) and add potatoes, dried fruits and carrots.  Add cinnamon, curry powder, paprika, and orange zest and juice.  In small bowl, whisk together beef broth and corn starch.  Add to crock pot along with red wine.  Let cook for 8 hours on low heat.  15 minutes before serving, add green peas to the crock pot and give everything a good stir.  In a small dish, combine chopped  almonds, parsley, and additional orange zest.  Tops bowls of beef stew with this mixture and enjoy!
