Last night my son and I shared one of our favorite treats……a big bowl of ice cream! This wasn’t our everyday ice cream though…..since I had strawberries that needed to be used, I made a delicious Strawberry Merlot Sauce to go over the top. This sauce is amazing! The sweetness from the strawberries is accented by the rich merlot wine and a little bit of black pepper adds a sense of depth that makes this sauce irresistible!
Strawberry Merlot Sauce
- 2 lbs strawberries, fresh, greens removed and cut into quarters
- 3 cups merlot wine (a nice one that you would drink)
- 1.5 tsp black pepper, fresh cracked
- pinch kosher salt
- 1 cup white sugar
Combine strawberries, wine, pepper and salt in a sauce pan. Bring to a boil, reduce heat to a simmer and let cook until strawberries are soft and mixture is reduced by half. Stir in sugar. Continue to cook for 20 minutes or until mixture is thickend and will coat the back of a spoon. As you are stirring, try and smash about half of the berries against the side of the pan using the back of a wooden spoon. Cool slightly and serve over ice cream. Mixture will keep in refrigerator for 1 week and it freezes well.
