Here is the recipe for my latest UNguilty pleasure….Chia Seed Tapioca Pudding. Chia seeds are a great source of fiber, calcium, and omega 3’s. The fact that I can sneak them into a dessert makes both me and my son quite happy! Unlike flax seeds, there is no need to grind them before eating. When the seeds are mixed with any liquid, they form a gel or pudding depending on how much you use. So cool! If you are looking to add a little more protein, I have also made this using Special K vanilla protein drink.
Chia Seed Tapioca Pudding
- 2.5 cups vanilla soy milk
- 1/2 cup chia seeds
- 1 tsp vanilla extract
- 2 tablespoons agave nectar or honey
- 1/2 tsp cinnamon (more of less to taste)
- (heavy cream optional)
- raspberries optional
Combine all ingredients in a bowl and stir until evenly combined. Let sit for 15-20 minutes. Stir occasionally. If mixture is too thick, add more liquid. If you don’t mind a little bit of a splurge, add a couple tablespoons of heavy cream. Chill and serve. Will keep up to 2 days in fridge.
