These brownies are everything that I could wish for in a dessert. Plenty of chocolate, whipped cream cheese frosting, coffee and, of course, rum! Tiramisu can be a time consuming dessert, but this recipe starts out with a boxed brownie mix and uses all of the same flavors to create something quick! These rich and fudgy brownies with the cool cream cheese and rum frosting won’t last long in my house!
- 2 boxes store bought brownie mix – I used one with chocolate chunks in it.
- Enough eggs and oil for package instructions
- 1/2 cup Kahlua
- 1 tsp instant coffee granules
- 1.5 cups heavy whipping cream
- 2 – 8 ounce packages cream cheese
- 3/4 cup powdered sugar
- 3 tablespoons light rum or 1.5 teaspoons rum extract
- Cocoa powder for dusting
Prepare brownie mix using oil and eggs amounts according to package instructions. Substitute Kahlua or coffee liquor for the amount of water required, mine called for 1/2 cup total. Stir in instant coffee granules and bake at 325 in a greased and floured 9×13 inch pan for 45 minutes or until tester comes out clean. Remove from the oven and let cool completely.
In medium bowl, beat the whipping cream until stiff peaks form. In another mixer bowl, cream together the cream cheese, powdered sugar and rum. Gently fold the whipping cream into the cream cheese mixture 1/3 at a time. Spread mixture over cooled brownies. Using a wire mesh strainer or a sifter, dust the cocoa powder over the top of the frosted brownies. Store in refrigerator.
